The essential tool for perfectly cooked, fluffy rice, just like in Japan. Once you start using a donabe ("earthen pot"), there's no going back to another rice cooker! The set includes a pot, an outer lid, an inner lid, a rice paddle and a clay stone serving plate.

Iga-yaki is one of Japan's most popular traditional ceramics. It is said to have originated in Iga, Mie prefecture, at the end of the 7th century. Nagatani-en, founded in 1832, is the leading producer of Iga-yaki pottery, and its "Kamado-San" donabe rice cooker is a best-seller in Japan. Each donabe is carefully crafted in the Nagatani-en factory, and takes around two weeks to make.

Instructions for first-time use:

Due to the porous nature of Iga clay, it is essential to "prepare" your donabe before using it for the first time. This process is known in Japan as Medome. It's a one-off process, and without it, there's a high risk of cracking or crazing.

  1. Make sure the bottom of the cooker is completely dry.
  2. Pour water into the cooker to about 70% of its capacity, and add cooked rice to about 20% of the water, mixing well.
  3. Close the cooker with the two lids one on top of the other, making sure that the steam outlet holes are aligned perpendicularly.
  4. Place over low-to-medium gas heat
  5. When the mixture begins to simmer, (after about 10 minutes) remove both lids and continue cooking on low heat until the mixture becomes almost like a paste (or a kind of rice cake). Never allow the rice to boil. Stir regularly to make sure the pasty rice doesn't stick to the bottom of the cooker.
  6. Turn off the heat and leave the mixture to cool in the cooker for about an hour.
  7. Empty the (inedible) mixture from the cooker. Rinse and dry your cooker.
  8. To clean your donabe, use a soft sponge with washing-up liquid and lukewarm water (never use an abrasive sponge).
  9. Once washed, wipe dry and ensure that the bottom of the cooker is completely dry by letting your donabe dry.
  10. Always check that the bottom of your cooker is dry before putting it on the gas. (A damp bottom could lead to cracks during cooking).
  11. Avoid over-heating and over-tempering. Avoid thermal shock by soaking your cooker in ice-cold water.
  12. Never put the cooker on the fire when it is empty.
  13. Do not attempt to fry with your cooker.
  14. Do not leave the cooker in water for more than 30 minutes.
  15. Make sure your donabe is completely dry before storing it in a cupboard.
  16. Caution: the cooker can be hot, so use gloves or a tea towel to handle it.
  17. Cooking times may vary from one rice to another.

Instructions for cooking rice :

  1. After washing, soak rice in water for 20 minutes.
  2. Place inner and outer lids: The inner lid is the secret of good taste and convenience.
  3. Cook over medium heat for about 12 minutes.
  4. Once steam begins to escape from the opening of the outer lid, leave on the heat for 1-2 minutes, then turn off the heat.
  5. Leave the rice to rest for about 20 minutes, then enjoy!
