Rice Alba, founded in June 2009 and located in Oita, specializes in the production of rice flour and rice-based products. Its director, Mr. Adachi, highlights the complexity of using rice flour, which is far less versatile than wheat flour. However, this challenge has become a true passion for the company, which is committed to developing high-quality rice flour, particularly for gluten-free breads and pastries. Thanks to innovative techniques, such as air-flow milling to minimize damage to starch particles, Rice Alba has succeeded in creating rice flour of exceptional quality.
