Située à Niimi, dans la préfecture d’Okayama, la maison Sankō Masamune est fondée en 1913 et perpétue une tradition centenaire de saké. Depuis 2008, elle est dirigée par le maître-brasseur Takagaki Katsumasa, reconnu à travers le Japon pour son savoir-faire. Alliant respect du terroir et innovation, la brasserie valorise les eaux pures de la rivière Jinmyōgawa et utilise majoritairement du riz Yamadanishiki et Omachi, cultivés localement en contrat. Spécialisée dans la production de saké, shōchū, mirin et liqueurs, elle s'appuie sur une expertise pointue de la fermentation pour élaborer des alcools au caractère authentique.
