Based in Nakatsu, Ōita Prefecture, Nitanda Shoyu has been preserving the art of artisanal soy sauce production since 1919 through a natural fermentation process that lasts two years. True to its local roots, the company crafts its sauces, ponzu, vinaigrettes, and seasonings using Japanese soybeans and regional ingredients such as yuzu and kabosu. Each product is handmade, with a focus on community, while making the most of natural resources such as the pure water of the Yamakuni River.
