Nestled in the heart of the Kumamoto mountains, Ooishi Shuzo has been carrying on the art of shochu-making since 1872. Bathed by the crystal-clear waters of the Kuma River and surrounded by lush nature, this family-run distillery combines ancestral know-how with modern techniques to produce exceptional shochus.

Every drop of their production is a tribute to their terroir: carefully selected rice grains, sometimes grown on their own farms, and a meticulously controlled fermentation process to reveal the full aromatic richness. Always in pursuit of innovation, the distillery has pioneered the aging of shochu in sherry and cognac barrels, bringing unprecedented depth and roundness to their cuvées.
