This variety is specially cultivated and manufactured in the Oki Izumo region, known for its unique climatic conditions and its soils rich in minerals. The taste of these Soba noodles is characterized by a pronounced hazelnut flavor and a soft and smooth texture. The ingredients used are buckwheat and natural source water from the region, without adding additives or preservatives. The buckwheat is grounded with a fine texture and an intense flavor. They can be served hot with a light or cold soba broth with a traditional soba sauce based on dashi, soy sauce and mirin. They can also be embellished with garnishes such as algae, green onions, wasabi or tempuras.

Our tips
