A white rice with a firmer texture than other varieties, ideal for everyday use in all kinds of dishes. It comes from the Japonica Akita Komachi rice variety, with which it shares the name "Komachi" in homage to the poet Ono no Komachi. This variety, grown in Italy, has been specially developed to adapt to the European climate while retaining the characteristics of Japanese rice. Its sticky texture, slightly firmer than other Japonica white rice varieties, and its sweet taste make it a versatile rice that can be eaten every day in all kinds of Japanese dishes, from sushi to donburi, but also in Western dishes such as fried rice or as an accompaniment to meat, fish, and vegetables.
