Ingredients

300 g Japanese round rice (sushi rice)
- 35 cl water
- 4 tbsp. rice vinegar

2 tbsp. sugar

1 tsp. salt
Instructions
- Place the rice in a colander and rinse with cold water several times, until the water runs clear. Drain.
- Place the rice and water in a saucepan (or rice cooker). Bring to the boil, cover and simmer for 12 minutes. Remove from the heat and leave to stand for 10 minutes without opening the lid.
- In a small saucepan, heat the rice vinegar with the sugar and salt just long enough to dissolve. Do not boil.
- Spread the cooked rice in a large bowl (ideally wooden). Pour in the seasoning and mix gently with a wooden spatula, aerating the rice to cool it.
- Cover with a damp cloth and let the rice come to room temperature before preparing your sushi.
