Ingredients

  • 300 g Japanese round rice (sushi rice)
  • 35 cl water
  • 4 tbsp. rice vinegar
  • 2 tbsp. sugar
  • 1 tsp. salt

Directions

  1. Place the rice in a colander and rinse with cold water several times, until the water runs clear. Drain.
  2. Place the rice and water in a saucepan (or rice cooker). Bring to the boil, cover and simmer for 12 minutes. Remove from the heat and leave to stand for 10 minutes without opening the lid.
  3. In a small saucepan, heat the rice vinegar with the sugar and salt just long enough to dissolve. Do not boil.
  4. Spread the cooked rice in a large bowl (ideally wooden). Pour in the seasoning and mix gently with a wooden spatula, aerating the rice to cool it.
  5. Cover with a damp cloth and let the rice come to room temperature before preparing your sushi.
