A seasoning designed to be used as a marinade for vegetables, meat, or fish. Kôji is obtained using rice of the Gohyakumangoku variety, grown in Ishikawa prefecture, a sake rice renowned for its refreshing taste.
Ideal as a marinade, it makes meats more tender and juicy, but can also be used in vinaigrettes, sauces or simmered dishes.
