Tiny rice crackers with a delicately salty taste, inspired by ochazuke. These crackers are made from glutinous rice varieties such as Hiyokomochi from Saga prefecture or Shin Habutae from Kyoto prefecture.
They are obtained by steaming the rice in cypress wood baskets, pounding it, then heating it in an oven. These little balls of rice can be used as a garnish, like furikake, in a light soup, ochazuke, or as breadcrumbs, replacing panko.
