This Daiginjo sake comes from a long fermentation at low temperature, highlighting a blend of three rice varieties grown in Hokkaido: Suisei, Ginpu and Kitashizuku. These ingredients give the sake refined, fruity aromas, evoking exotic notes such as lychee. Its balanced structure offers a subtle sweetness, reminiscent of pina colada flavors, while its slightly creamy texture coats the palate and provides a silky mouthfeel. The water used for its brewing comes from the Daisetsuzan mountain range, a snow-covered region that guarantees pure, soft water, perfectly suited to the production of exceptional sake. This Daiginjo is elegant and delicate, with a delicate fragrance and a clean, refreshing taste. The company is dedicated to making sake, using local ingredients such as pure water from Mount Daisetsu and rice grown in Hokkaido.
