A soy sauce condiment with a rich, umami taste, ideal for enhancing your dishes. It's made from kôji rice ferments from the Gohyakumangoku variety, grown in Ishikawa prefecture, a sake rice renowned for its refreshing taste. The kôji it contains helps to make meats more tender when used in marinades, but it can also be used pure as a seasoning or incorporated into sauces or simmered dishes.

Founded in 1884, Yoshiichi Shoyu specializes in fermented products. It produces its own kôji using artisan methods unchanged since its foundation in the town of Bakusan, Ishikawa prefecture.
