Naturally red, Yuyake-mochi glutinous rice is distinguished by its high fiber, tannin and antioxidant content, surpassing that of ordinary brown rice. It is also rich in minerals, especially magnesium. The Japanese often use it to prepare sekihan, a dish based on rice and red azuki beans. Its color sometimes makes it a choice for sake rice. It is generally eaten mixed with white rice in a ratio of 1/3, which enriches the mixture in flavor, texture and color. It can also be used in salads, sautéed rice or desserts. This red rice is grown in Toyama prefecture, renowned for the quality of its rice. The plains of this region are irrigated by snowmelt from Mount Hida, also known as the "Northern Alps". Thanks to its fertile, nutrient-rich soils, this region is particularly suitable for growing rice.

It is characterized by its high fiber, tannin and antioxidant content, which is higher than that of ordinary brown rice. It is also rich in minerals, notably magnesium.
