Milder than a classic sesame oil, this distinctive sesame oil adds depth to the dish by giving a textured feel on the tongue and a lingering sesame taste. While the traditional extraction method consists of pressing the sesame seeds 3 times to extract the full amount of sesame oil, this oil is made using only the first extraction: the most aromatic, which represents around 60% of the oil contained in a seed, resulting in a highly fragrant oil with a real texture on the palate. Its taste is milder than classic sesame oil, making it ideal for frying. It is also perfect for adding depth to sauces, broths and vingrattes.

Yutaka Yamada, founder of the Yamada Kyoto Corporation, was originally a train driver who fell ill due to overwork. He then met Yukikazu Sakurazawa, who introduced him to macrobiotics, which would enable him to regain his health. To thank Yukikazu, Yamada decided to take up the production of macrobiotic foods himself, "good for people and good for society". At first he produced oil, but also wheat and buckwheat noodles, before specializing in sesame products.
The company's nickname "Henko", meaning "determined", symbolizes Yutaka Yamada's determination to produce high-quality products.

I prefer the vinaigrettes available at Irasshai rather than this oil, which I'm not sure what to do with.
But maybe that's just my limited skills!
