Ponzu sauce made with jabara juice, soy sauce, rice vinegar and dried bonito. Jabara is a citrus fruit from the Wakayama prefecture, grown in the village of Kitayama (which boasts 5,000 trees), and is a natural descendant of yuzu. Smaller than yuzu, it contains slightly more juice. Highly acidic, its aroma is unique, with a slight bitterness. This sauce has a fresh, tangy taste, ideal for accompanying meats and fish. It is also used to prepare cold noodle dishes.
