Creamy and fragrant, this traditional goma dare sauce combines the richness of sesame with the sweetness of mirin and the depth of soy sauce. Perfect with shabu-shabu, cold salads or soba noodles, it offers a velvety texture enhanced by a touch of sesame oil and toasted seeds. An essential staple of Japanese cuisine, simple to prepare and full of umami.

3 tablespoons Japanese white sesame paste (or tahini)

2 tbsp. soy sauce

1 tablespoon sugar (or mirin)

1 tablespoon rice vinegar
- 1 tablespoon water (or more, depending on desired consistency)

1 teaspoon sesame oil

1 tsp white miso for extra depth (optional)

Toasted sesame seeds for the finishing touch
Instructions
In a small bowl, mix together the sesame paste, soy sauce, sugar (or mirin) and rice vinegar. Use a whisk or wooden spoon.
Gradually add the water until the sauce is smooth but still glossy (neither too liquid nor too thick).
Add the toasted sesame oil last. It adds a subtle aromatic touch and warms up the sauce with its roasted notes.
Add a spoonful of white miso for a more intense umami flavor. If you prefer a warm sauce, heat it very gently over low heat without boiling.
Pour into a small bowl and sprinkle with toasted sesame seeds just before serving. This sauce is a perfect accompaniment to salads, cold meats, steamed vegetables or soba noodles.

1. An emblematic shabu-shabu sauce
Goma dare is one of the two traditional sauces served with shabu-shabu, the other being ponzu (citrus fruit and soy sauce). Each guest dips the meat and vegetables in the sauce of their choice - goma dare is appreciated for its creaminess and roundness.
2. Sesame and longevity
In Japan, sesame is an ingredient associated with vitality and longevity. It is found in many traditional dishes, notably in the form of sauces or condiments such as goma-ae (spinach with sesame).
3. A bento classic
Some cold vegetable salads in bentô are garnished with a drizzle of goma dare, sometimes thickened like a vegetable mayonnaise. It's a healthy and delicious way to season dishes.
4. A sauce that travels
Although originally from Japan, goma dare is now used in fusion cuisine, notably in California and Hawaii, where it is used to season poke bowls, wraps and mixed salads.
