A condiment made from enoki mushrooms grown in the Nagano region, in the heart of Shinshu, a region renowned as the birthplace of Japanese mushrooms. The mushrooms, recognizable by their creamy color and delicate texture, are harvested on the morning of preparation and then prepared with an artisanal sauce with a mild, balanced, umami taste, composed notably of soy sauce, mirin, vinegar and kombu seaweed. This versatile condiment is ideal for enhancing classic Japanese dishes. It can be enjoyed on its own, over a bowl of hot rice, vegetables or tofu, or to enhance hot, simmered dishes and broths such as nabe or ramen.
