A light-textured kombu seaweed made by an artisan in the town of Tsuruga, in the Fukui prefecture. The kombu seaweed is grated by hand and then marinated in vinegar, creating a cloudy texture that retains all the kombu seaweed's umami.
Oboro kombu is a highly versatile ingredient that can be used in a wide variety of dishes: whether in miso soup to add texture and intensify flavor, or on onigiri in place of nori seaweed leaves. Its filaments can also be added to udon or cold soba.
Once chopped or powdered, this partially water-soluble seaweed acts as a natural thickener, thanks to the alginate it contains and its high fiber content. This makes it a very useful ingredient for thickening sauces or preparing condiments such as vegetable puree or miso paste. You can also mix it with mayonnaise to accompany fish, or incorporate it into meatballs.

Located in Tsuruga, Fukui prefecture, Okui Kaiseido has been a specialist in exceptional kombu since 1871. Born in an ancient trading port key to the kombu trade between Hokkaidō and Kansai, the company cultivates know-how handed down through four generations. It selects the best seaweed from the Rishiri and Rebun coasts, which it slowly matures in its own warehouses to reveal their full depth, giving birth to its flagship product: "kuragakoi kombu", refined kombu. Supplying Zen temples such as Eiheiji and top Japanese and international restaurants, Okui Kaiseido perpetuates a demanding artisanal tradition, while conveying a strong message: nourish body and spirit with food rooted in Japanese culture.

Oboro kombu is partially soluble in water. Whether in filaments, chopped or powdered form, it acts as a natural binder, thickening your preparations while adding flavor.
