Would you like to learn how to make "masu zushi," one of the iconic dishes of Toyama's traditional cuisine?


During Toyama Week at iRASSHAi, Toyama Prefecture invites you to discover one of its signature dishes: masu zushi.

A traditional specialty of Toyama,masu zushiis pressed sushi made with trout (masu) and vinegared rice, delicately wrapped in bamboo leaves. Appreciated for its freshness and elegance, it embodies the culinary expertise and rich produce of the region.

During this workshop, Chef Shibata will guide you step by step through the preparation of this iconic dish, sharing the techniques, essential skills, and history behind this traditional Japanese recipe.
A friendly and immersive experience, accessible to all, offering a unique insight into Toyama's cuisine.

  • Hours:

    • Session 1: 11:00 a.m. – 12:00 p.m.

    • Session 2: 2:00 p.m. – 3:00 p.m.

  • Participation fee: €15

  • Number of participants: Maximum 10 people per session

  • Location: STUDIO (level -1 of iRASSHAi next to the BIWAN restaurant)

The prepared sushi will be eaten on site; if the weather does not permit, it can be taken away.

Terms and Conditions

Prices are listed in euros on the workshop product page. Payment is made online by credit card.

You may cancel your workshop reservation up to 4 days before the scheduled date. For cancellation requests received by iRASSHAi less than 4 days before the workshop date, iRASSHAi will review requests on a case-by-case basis and reserves the right to refuse the cancellation request, in which case the deposit will not be refunded.

CANCELLATION AND MODIFICATION CONDITIONS :

All registrations for cooking classes are final and non-refundable.

  • Cancellation more than 24 hours before the start of the course: a fixed fee of €5 will be retained. Any remaining balance will be refunded.
  • Cancellation less than 24 hours before the start of the class or no-show: the class fee is due in full, i.e., $15, and no refund will be given.

CANCELLATION BY iRASSHAi:

iRASSHAi reserves the right to cancel or postpone a class in the event of force majeure. In the event of cancellation, iRASSHAi will inform the customer as soon as possible and schedule a new date with the same services. iRASSHAi reserves the right to postpone a class of 8 people if the number of participants is less than 5.

iRASSHAi reserves the right to modify or cancel recipes, dates, class times, or location in the event of circumstances such as the failure of the instructor or supply difficulties. In such situations, the customer acknowledges that adjustments may be made to the originally planned recipes, depending on product availability. If these adjustments do not fundamentally alter the recipe or its essence, the class will continue as planned, and no partial or full refunds will be given. The customer will be notified of these adjustments by email or phone as soon as possible.

Participants are responsible for their active participation and must comply with health and safety guidelines. iRASSHAi is not liable for any physical injury occurring during the class.

Customers must report any allergies; otherwise, iRASSHAi cannot be held liable.

Participants are responsible for their personal belongings. iRASSHAi cannot be held liable for any damage or loss.

Participants may take the dishes prepared during the class to eat outside of iRASSHAi. iRASSHAi draws attention to the fact that dishes must be kept cool and consumed within the same day. The consequences of transport and storage and any damage that may result are the sole and exclusive responsibility of the Customer.
