Located next to Poissonnerie Viot, a Parisian institution renowned for the quality of its products, this workshop offers an immersive experience in the art of preparing line-caught fish.

Under the guidance of Quentin Garo, participants learn every essential step, from initial preparation, scaling, and gutting to the precise cutting of sashimi. The focus is on mastering the technique, respecting the product, and understanding the different textures and parts of the fish.

Throughout the workshop, you will learn how to use the tools, refine your cutting technique, and identify the signs of freshness and quality. Special attention is given to precision and delicacy, which are essential for bringing out the best in fish in its purest form.

An experience that is both technical and sensory, allowing you to get up close with the product, appreciate its full richness, and leave with a solid foundation for recreating these techniques at home.

Terms

1. Purpose

These General Terms and Conditions of Sale (hereinafter the “GTC”) govern the terms and conditions for booking and participating in events, workshops, and experiences organized as part of the BIWAN Culture Club, offered by the BIWAN restaurant.

Any reservation implies full acceptance of these Terms and Conditions.

2. Services Offered

The BIWAN Culture Club offers cultural and culinary events such as cooking and baking workshops, tastings, lectures, and themed evenings.

Each event is described in detail (content, duration, speakers, price, special conditions) and this information is provided at the time of booking.

3. Reservation and Payment

Reservations can be made through the channels specified by BIWAN (on the irasshai.co website)

Full payment is required at the time of booking to confirm your participation.

The reservation is considered final and binding once payment has been confirmed.

4. Rates

Prices are listed in euros, including all taxes.

BIWAN reserves the right to change its rates at any time, provided that the price charged is the one in effect at the time of booking.

5. Cancellation and Refund Policy

Cancellation by the participant:

  • Any cancellation made more than 7 days before the event will result in a full refund.
  • Any cancellation made between 7 days and 72 hours before the event will result in a 50% refund of the total amount.
  • No refunds will be issued for cancellations made less than 72 hours before the event or for no-shows.

Cancellation requests must be submitted in writing to BIWAN.

Cancellation by BIWAN:

BIWAN reserves the right to cancel or postpone an event in the event of force majeure, insufficient attendance, or the unavailability of a speaker.

In that case, participants will receive a full refund.

6. Access to events

Participants must arrive at the specified time.

Some workshops may have age restrictions (e.g., children’s workshops / parent-child workshops).

7. Liability

Participation in the workshops requires compliance with the instructions given by the facilitators.

BIWAN shall not be held liable for any damage resulting from misuse of the equipment or failure to follow safety instructions.

8. Personal Information

The information collected during the registration process is necessary for managing registrations and for event-related communications.

They are processed in accordance with applicable data protection regulations.

9. Right of publicity

Unless participants expressly object prior to the event, they authorize BIWAN to use images taken during the workshops for communication purposes (social media, press, website).

10. Intellectual Property

The content, recipes, materials, and documents provided during the workshops remain the property of the presenters or BIWAN. Any reproduction or distribution is prohibited without authorization.

11. Governing Law

These Terms and Conditions are governed by French law.

Any dispute shall be submitted to the competent courts.
