Long and thin, they are made from buckwheat flour and have a lovely brown color. They are very easy to prepare, either hot in a soup or cold, seasoned with mentsuyu sauce, made from soy sauce, dashi, and cooking sake. They have a delicious nutty flavor.

Made in Japan by Shinshu Togakushi Soba, a family-run company specializing in noodle production since the postwar period, they are produced in the Nagano region, which is renowned for the quality of its buckwheat.

1. Place the soba in 1L of boiling water.
2. Cook for 5 min 30 sec, stirring gently.
3. Drain and rinse them for smooth, non-sticky noodles.

Adjust the cooking time and firmness of the noodles to your liking.

Store away from light, heat, and moisture.
