Long and thin, they are made from buckwheat flour and have an attractive brown color. They can be cooked very simply, hot in soup or cold, seasoned with mentsuyu sauce, a blend of soy sauce, dashi and cooking sake. They have a delicious nutty taste.

Produced in Japan by Shinshu Togakushi Soba, a family-run noodle company since the post-war period, they are made in the Nagano region, renowned for the quality of its buckwheat.

100g per person
1. Place soba in 1L boiling water.
2. Cook for 5min 30s, stirring gently.
3. Drain and rinse for smooth, non-sticky noodles.

Adjust cooking time and noodle firmness to taste.

Store away from light, heat and moisture.
