Long and thin, they are made from buckwheat flour and have a lovely brown color. They are very easy to prepare, either hot in a soup or cold, seasoned with mentsuyu sauce, made from soy sauce, dashi, and cooking sake. They have a delicious nutty flavor.

Produites au Japon par Shinshu Togakushi Soba, une entreprise familiale spécialisée dans la fabrication de nouilles depuis l’après-guerre, elles sont réalisées dans la région de Nagano, qui est réputée pour la qualité de son sarrasin.

1. Plongez les soba dans 1L d’eau bouillante.
2. Faites cuire 5min 30s en remuant doucement.
3. Égouttez et rincez-les pour des nouilles lisses et non collantes.
