The seaweed is harvested in Akashi, Hyogo Prefecture, one of Japan’s leading fishing areas, which is particularly renowned for its seaweed. The seaweed is cultivated in fast-moving currents, giving it a unique texture and flavor. Just like Shincha tea, only the first shoots of the year are harvested and then roasted using a specific method to preserve the full richness of their flavor and aroma. The seaweed is slowly toasted, giving it a texture that is initially thick but then melts in the mouth, bringing out the full flavor of the nori seaweed! Rich in both flavor and nutrients, it can be eaten as is, in salads, or as a condiment to season a dish.
