An unpasteurized soy sauce made in Sodoshima, Kagawa Prefecture, renowned for the quality of its soy sauce. The brewery is one of the largest in Japan. Its high nitrogen content gives it an umami-rich taste that's both mild and well-balanced, enhancing even the simplest foods such as root vegetables. It can also be added to dashi broth or udon noodles.

Located in Shodoshima, the Mecca of shoyu, Shokin was founded in 1920. Faithful to a philosophy of diversity and high standards of craftsmanship, it produces its sauces naturally in cedar barrels, according to the season, with constant care. It is renowned for its additive-free shoyu, dashi and ponzu, rich in umami and depth.
