This sauce is made up of dashi broth, soy sauce and mirin, mixed with sugar and rice vinegar.

Savory and sweet flavors, with a subtle note of rice vinegar for a perfectly balanced flavor.

It is traditionally used as sauce for Soba and Udon noodles, but can also be used as a marinade for meat, vegetables and seafood, or as an accompaniment sauce for sushi and other Japanese dishes.
