A traditional sweet potato shochu with a rich and balanced flavor, featuring hints of bitterness and a texture that is both round and deep. Produced in Miyazaki using an artisanal technique passed down from generation to generation for over a century, it is made from sweet potatoes harvested in the fall, then fermented in large earthenware jars with koji cultivated in wooden vats. The shochu is then slowly aged for one year in an earthen warehouse. This production method gives it a unique taste and texture, enjoyable both hot and cold, as well as on the rocks or diluted with water. The distillery, founded in 1892, is the last in Miyazaki to carry on this tradition. It has received several gold medals at national Japanese spirits competitions.
