Fine shavings of naturally smoked and dried katsuobushi, free from additives, with a deeply umami flavor.
They are made exclusively from wild skipjack tuna sourced from certified sustainable fisheries. The skipjack tuna is then hand-cut, smoked, and finally hot-air dried over wood chips without any additives or colorants.
This essential ingredient in Japanese cuisine is notably used to prepare dashi broth, which serves as the base for many dishes, soups, and sauces. These flakes are characterized by a deeply intense umami flavor and a slightly fibrous texture. It can also be sprinkled like furikake over rice, in salads, or in poke bowls. You can also sprinkle it on hot dishes such as okonomiyaki, takoyaki, pizza, or quiche.
