Sweet potato starch is a fine powder used to make warabi mochi, a gelatinous pastry traditionally made from fern starch, sugar and water. Sweet potato starch adds a unique texture and slightly sweet flavor to warabi mochi. This product is gluten-free.

Maeda, founded in 1924 and located in Uwajima in the Ehime region, specializes in the manufacture of cereal-based food products, particularly barley and rice. The company places particular emphasis on the use of local and natural ingredients, without additives or colorants. Its philosophy is based on creating safe, healthy and tasty products, while respecting traditions and integrating modern technologies to meet its customers' needs. Maeda also emphasizes innovation, with functional products such as GABA-rice.

In a saucepan:
- whisk 230 ml water with 50 g warabi mochi mix and 50-80 g sugar to prevent lumps.
- bring to the boil, stirring well
- when the mixture is smooth and transparent, turn off the heat and spread the dough on a baking sheet.
- Leave to cool for 10-15min, cut the dough into a checkerboard pattern with a knife, sprinkle with kinako, then pour over the kuromitsu.

Microwave:
- in a bowl, whisk together 200 ml water with 50 g of this mixture and 50-80 g sugar
- cover and microwave for 4 minutes
- stir until smooth, then roll out on a baking sheet.
- Leave to cool for 10-15 minutes, then cut the dough into a checkerboard pattern with a knife, sprinkle with kinako and pour over the kuromitsu.

Store away from light, heat and moisture. Do not refrigerate warabi mochi.
