A pickled daikon radish with a delicately sweet, deeply umami taste. Made in Miyazaki prefecture using traditional craftsmanship. The radishes are grown under the Miyazaki winter sun, then carefully dried for two weeks, during which time they lose their water and concentrate their aromas. They are then matured in underground vats, where they ferment slowly to develop their characteristic crunchy texture.
With no additives, this takuan is ideal for everyday consumption. It goes perfectly with a bowl of rice, sushi or a bento, but can also be used as an ingredient in sauces or seasonings to enhance the flavor of various dishes. A true classic of Japanese gastronomy, it adds a touch of freshness to your meals.

Located in Tahara, Aichi Prefecture, Kimura Tsukemono is a family-run business founded in 1951, specializing in takuan made from traditional white daikon. Rejected by conventional circuits for its low water content and firmness, this ancient vegetable is nevertheless ideal for long fermentation: it produces a takuan that is naturally crunchy, tasty and stable over time. Kimura's aim is to make the most of rare know-how, using modern techniques to cultivate and process a demanding ingredient that is now under threat.
Store away from light, heat and moisture. After opening: keep in a cool place. Consume quickly.
