A variety of koshihikari rice, reputed in Japan to be the "King of Rices" due to its shiny appearance and umami taste that doesn't deteriorate during cooking, making it the ideal everyday rice to accompany a light tsukemono or raw fish dish. It is harvested in Shimane prefecture, in the Nita region, which is renowned for its terraced rice paddies and particularly favorable climate for rice growing, thanks to the many surrounding mountains that supply the paddies with pure water.

300g rice for 2 to 4 people: hand-wash the rice 3 times with water, then rinse until the water runs clear. Place the rice in a saucepan, add 430ml water and leave to stand for 30 minutes. Cover the pan and heat over medium heat until boiling. Lower the heat and cook for 10 minutes without removing the lid. Turn off the heat and leave to stand for a further 10 minutes, still with the lid on. Gently stir the rice before serving.
