Located in the town of Hekinan, in Aichi prefecture, Yamashin is a 200-year-old brewery specializing in white soy sauce. While there are many soy sauce, mirin and sake breweries in the city, Yamashin stands out from the rest for its use of wooden casks, which add depth on the palate.
