Produced on the unspoilt island of Osakikamijima, this handcrafted soy sauce is the fruit of know-how handed down through three generations of master brewers for over 100 years. Slowly fermented for two years in Japanese cedar barrels, it develops a unique depth of umami and elegant fragrance. Only less than 1% of soy sauces produced in Japan still benefit from this traditional wooden barrel process. These barrels are home to a living ecosystem of micro-organisms, specific to each brewery, which shape the aromatic richness and complexity of the sauce. Every step of the manufacturing process is meticulously carried out, from the selection of local raw materials : Soya and wheat grown by farmers in the Hiroshima region. Sea salt harvested from the Seto Inland Sea, which surrounds the island. This soy sauce reveals the natural flavor of the ingredients it accompanies, offering an authentic taste experience thanks to its slow fermentation process and the influence of the island's climate. Ideal for marinades, sashimi or grilled vegetables.

Okamoto Shōyu, based on the island of Osakikamijima, has been perpetuating unique craftsmanship for almost 100 years. Its soy sauce is fermented for up to three years in cider-wood barrels, a rare method that gives it a deep umami and elegant aroma.
