Founded in 1772 by Chobei Muroya, Yamagen Jozo is a brewery specializing in the artisanal production of miso, soy sauce and koji. Based in Takaoka, in Toyama prefecture, it relies on know-how handed down over 250 years. The region, renowned for its humid climate and pure groundwater, offers ideal conditions for fermentation. Thanks to this favorable natural environment and techniques refined over generations, Yamagen Jozo continues to produce exceptional fermented foods, combining tradition and quality.
For 1 volume of tsuyu, use 2 to 5 times the volume of water for soup stock, and the same amount for sukiyaki or stew. Do not dilute for cold dishes.
