A versatile seasoning combining the aromatic richness of shio koji and the sweet umami flavor of Kagoshima black garlic. Slowly matured at high temperatures, black garlic loses its pungent taste and becomes tender and sweet, rich in antioxidants and essential amino acids. Reduced to a paste and mixed with shio koji, it adds round, sweet notes to dishes and can also be used as an alternative to salt.
Simply marinate meat for 30 minutes with this black garlic shio koji to achieve a tender and juicy texture. Mixed with olive oil or sesame oil, it can be used to make a vinaigrette. It can also be mixed with fresh cheese or miso to make a sauce for spreading on toast or dipping vegetables.
