These wheat noodles are made with Japanese medlar leaves harvested in Kagoshima prefecture. They are then processed using a patented manufacturing process that removes impurities from the leaves before drying them in the sun, then roasting them with tourmaline. This allows the leaves to preserve their polyphenols, giving the somen a natural antioxidant effect. Extremely versatile, these noodles feature a sweet, roasted taste that can be enjoyed hot or cold in any dish: Japanese-style, with a men-tsuyu sauce, Chinese-style with a jajang men sauce or Italian-style with a Neapolitan sauce.
