Vendor : Nakasada Shoten
⋅ Fermented 3 years in cedar barrels
⋅ Intense umami
⋅ Use in marinades to caramelize
⋅ A few drops to replace salt in a broth
Derived from the miso-making process, this authentic tamari is produced in wheat-free Aichi Prefecture and benefits from three years' aging, revealing deep, complex aromas. Its initially saline flavor gives way to a persistent, well-balanced umami. When cooked, it produces a brilliant caramelization, while when seasoned raw, it releases an intense aromatic richness that enhances every dish. Founded in 1877, Nakasada Shoten perpetuates over 140 years of traditional know-how. Located in Taketoyo, a town that has become a major miso and tamari production center, the company benefits from privileged access to local raw materials and export circuits. This expertise is reflected in every bottle, faithful to the authentic flavours of Japan.
