Les origines d'Ippodo remontent à plus de trois siècles, en 1717, lorsque Rihei Watanabe a ouvert un magasin appelé Omiya pour vendre du thé et des céramiques. En 1846, le magasin a été rebaptisé Ippodo, ce qui signifie "préserver". Le nom vient du prince Yamashina, qui appréciait le thé Ippodo et voulait que le magasin préserve une tradition : fournir du thé de haute qualité. Ippodo continue de s'adapter à l'évolution des temps, mais est resté fidèle au thé japonais de haute qualité depuis lors.
