The aromas of this infusion of roasted buckwheat (soba) are reminiscent of chestnuts and hazelnuts. Tartarian sobacha differs from classic sobacha in that its taste is less bitter and its yellow color is more greenish. It is also richer in rutin, a flavonoid tannin with powerful antioxidant and anti-inflammatory properties. Kota Shoten, founded in 1948 in Hitachinaka, Ibaraki prefecture, is a Japanese company specializing in the processing and distribution of agricultural products such as kinako (roasted soy powder), potato starch, beans and pickles. Specializing in natural food products, the company sources from local producers, guaranteeing the freshness and quality of its products.
Among their flagship products is kinako, a lightly sweetened roasted soy powder, rich in vegetable protein and fiber. It is used in a variety of culinary preparations, including traditional Japanese desserts such as dango (glutinous rice dumplings) and mochi (glutinous rice cakes). Kota Shoten's kinako is made from non-genetically modified soybeans from Hokkaido, offering authentic flavor and a light texture.
Infuse 1 sachet in 500ml boiling water for a few minutes, or in chilled water for at least 1 hour.
Store airtight, away from light, heat and moisture. After opening, use up quickly.
