Black rice is grown in Toyama prefecture, which is renowned for the quality of its rice. The plains are irrigated by melting snow from Mount Hida, also known as the "Northern Alps". With its fertile, nutrient-rich soils, the region is ideal for growing rice. Japanese eat it mixed with white rice in a ratio of 1/3, which adds taste, texture and color to the rice. It can also be eaten in salads, as stir-fried rice or in desserts.
