A high-quality sticky rice of the Shin Taisho Mochi variety, nicknamed by the Japanese "the king of sticky rice," or even "ghost rice" due to its great rarity outside Toyama Prefecture, where it is almost never distributed.
It is characterized by a sticky and soft texture that does not fall apart during cooking, making it ideal for preparing pastries, confections, or sekihan, a dish made with rice and red beans.
It is harvested in Toyama Prefecture by Nanohana, a company specializing in rice production. Black rice is grown in Toyama Prefecture, which is renowned for the quality of its rice. The plains are irrigated by snowmelt from Mount Hida, also known as the “Northern Alps.” With its fertile, nutrient-rich soil, the region is ideal for rice cultivation.

For one person: Wash the equivalent of one cup of rice by hand, then rinse it until the water runs clear. Add a bowl of water to a saucepan and let it rest for 30 minutes. Cover the saucepan and heat over medium heat until boiling, then cook over low heat for 10 minutes. Turn off the heat and let it rest for 10 minutes with the lid on.
