Located in Tokyo's Kappabashi shopping street, Sankidō was founded in 1943 and has been offering a wide range of kitchen utensils, Japanese tableware and equipment for catering professionals for decades.
Wet your fingers with vinegar water. Roll up the mat, pulling it towards you. Repeat several times to form the sushi. Once you're happy with the shape, close the sushi by lightly wetting the edge of the nori sheet. Press down hard on the roll, then leave to rest for a few minutes before unrolling and cutting.
