This double fermentation soy sauce is produced by a Japanese family business that has specialized in soy sauce production for over 160 years. This soy sauce is specially designed for use with sashimi dishes and is made from high-quality soybeans, wheat and natural sea salt. The "two-step brewing" process uses naturally brewed soy sauce as the brewing water and koji as the brewing yeast. It is slightly milder and lighter in color than other soy sauces, which enhances the natural flavor and delicate texture of sashimi. Its light texture and subtly salty flavor make it a perfect accompaniment to raw or cooked seafood.
