Junmaishu Kuro-Obi is a sake brewed using the traditional Yamahai method, employing yeast cultivated specifically for this technique and slow aging in the brewery. It develops aromatic depth, highlighting the natural flavors of the rice with a subtle balance between richness, clarity, and intensity.
Its name, Kuro-Obi, which means “black belt,” was given to it by the writer Kenichi Yoshida. This name evokes the mastery and expertise comparable to that of black belt holders in martial arts, and underscores its assertive character, intended for experienced sake connoisseurs.
Brewed from Yamadanishiki and Kinmon Nishiki rice, this sake is crafted without artificial blending, allowing it to express a natural balance of roundness, complexity, and elegance. It is particularly popular in Kanazawa restaurants, where it pairs perfectly with seafood, sashimi, and sushi, as well as dishes richer in umami. Its dry, structured flavor is distinguished by a lovely, lingering finish.

L’histoire de sa brasserie, la plus ancienne de Kanazawa, commence à l’époque d’Edo en 1625. Le saké y est fabriqué en utilisant uniquement du riz à saké et de l’eau hyakunensui, obtenue par la pluie et la neige tombant au pied du mont Hakusan et qui a passé au moins 100 ans à filtrer dans les profondeurs du sous-sol.
