Junmaishu Kuro-Obi is a sake made using the traditional Yamahai method, using yeast grown specifically for this technique and slow aging in a brewery. It develops aromatic depth, highlighting the natural flavors of rice with a subtle balance of richness, sharpness and intensity.
Its name, Kuro-Obi, meaning "black belt", was given to it by the writer Kenichi Yoshida. This appellation echoes the mastery and expertise comparable to those of black belt holders in the martial arts, and underlines its assertive character intended for experienced sake lovers.
Brewed from Yamadanishiki and Kinmon Nishiki rice, this sake is conceived without artificial blending, allowing it to express a natural balance between roundness, complexity and elegance. It's particularly popular in Kanazawa restaurants, where it's the perfect accompaniment to seafood, sashimi and sushi, as well as dishes richer in umami. Its dry, structured taste is distinguished by a long finish.
One of the special features of Junmaishu Kuro-Obi is its ability to fully reveal its flavors when heated, a rare characteristic in the world of sake and referred to as "kan-agari". It can be enjoyed chilled, offering a clean, refreshing sensation, or warm to hot, accentuating its roundness and aromatic depth. More details on this product
The history of its brewery, the oldest in Kanazawa, goes back to the Edo period in 1625. Sake is made here using only sake rice and hyakunensui water, obtained from rain and snow falling at the foot of Mount Hakusan, which has spent at least 100 years filtering deep underground.
Keep away from light and heat. After opening: Store in a cool place, tightly closed. Consume quickly.
