Shinshu Togakushi's soba noodles are a specialty of Japan's Nagano region. These noodles are made from high-quality buckwheat flour, which is blended with pure water from the Togakushi mountains to create a firm, slightly crunchy texture and delicious taste.
Soba noodles are often served with tsuyu sauce, a dashi broth with soy sauce and mirin. The tsuyu sauce is poured over the cooked soba noodles, accompanied by various ingredients such as chopped green onions, nori seaweed leaves and vegetable or shrimp tempura.

Produced in Japan by Shinshu Togakushi Soba, a family-run noodle company since the post-war period, they are made in the Nagano region, renowned for the quality of its buckwheat.
For 1 person: place 100g soba in 1L boiling water. Cook for 5min30, stirring gently. Drain and rinse in cold water. Enjoy cold, "zaru"-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.).
Adapt the cooking time and firmness of the noodles to your taste.
Beware of spillage during cooking.
