A premium matcha with a balanced flavor, combining deep umami and slight astringency for a refreshing and smooth mouthfeel. Its creamy foam and velvety texture make it a tea that is pleasant to enjoy on its own or to incorporate into recipes. Made from Tencha leaves grown in the Uji region near Kyoto, an area renowned for the quality of its teas, this matcha is produced using traditional methods. As with Gyokuro, the young tea shoots are shaded for about 30 days before harvesting. This method stimulates the production of chlorophyll and theanine, which are responsible for its green color and rich aroma. After picking, the leaves are steamed, dried flat without being rolled, and then carefully ground with a stone mill. This artisanal process takes about an hour to produce just 40 g of powder. The result is an extremely fine matcha powder, which has slight lumps due to static electricity, a sign of freshness and a guarantee of the matcha's fineness. It dissolves easily in hot water or milk and can also be used in cooking to make ice cream, pastries, and even sauces. It goes well with both dairy products and savory dishes, allowing you to revisit classic Western recipes with a Japanese twist.
