A premium matcha with a balanced taste, blending deep umami and light astringency for a mouthfeel that is both refreshing and smooth. Its creamy foam and velvety texture make it a pleasant tea to enjoy neat or to incorporate into recipes. Made from Tencha leaves grown in the Uji region, near Kyoto, a region renowned for the quality of its teas, this matcha is produced according to traditional methods. As with Gyokuro, the young tea shoots are shaded for around 30 days before harvesting. This method stimulates the production of chlorophyll and theanine, responsible for its green color and aromatic richness. After plucking, the leaves are steamed, dried flat without rolling, and then meticulously stone-ground. This artisanal process takes about an hour to produce just 40 g of powder. The result is an extremely fine matcha powder, with slight lumps due to static electricity, a sign of freshness and a guarantee of matcha's finesse. It dissolves easily in hot water or milk, and can also be used in the kitchen to prepare ice creams, pastries and even sauces. It goes equally well with dairy products and savoury preparations, and can be used to revisit classic Western recipes with a Japanese twist.

For one cup of traditional matcha: 2 g to 75 ml of water at 70℃. Pour the water over your matcha and stir vigorously with a "chasen" matcha whisk. When foam forms on the surface, you can enjoy.
