A tasting set featuring three exceptional Junmai Daiginjo sakes from the Dassai brand. Each of these sakes is crafted from Yamada-Nishiki rice, carefully polished to reveal the grain’s full aromatic profile. Dassai 23, polished to 23% to retain only the core of the grain, reveals delicate notes of apple and pear, making this sake an ideal pairing for aged cheeses, fish, and desserts. Dassai 39, made from rice polished to 39%, offers a rounded flavor, balanced by fruity notes of pear, apple, and strawberry, and a subtle acidity reminiscent of wine; it pairs perfectly with shellfish, fish in sauce, or steamed vegetables. Dassai 45, polished to 45%, offers a fruity profile of pear and Muscat grape, accented by light hints of citrus and chestnut, with a soft and refreshing finish, best enjoyed at room temperature or well-chilled. Ideal as a gift or for those new to the world of sake, this exceptional gift set allows you to explore the aromatic progression and complexity of Dassai sakes, from the most refined to the most accessible, offering a complete tasting experience for enthusiasts and connoisseurs alike.

Plus de détails sur ce produit

Dassai is brewed by Dassai Inc. (formerly Asahi Shuzo), an artisanal brewery nestled in the isolated mountains of Yamaguchi Prefecture, at the southern tip of Honshu. Its name, meaning “otter festival,” comes from the region’s former name, where otters once lined up their catches on the riverbank as if presenting them at a festival; haiku poet Masaoka Shiki himself took inspiration from this for his pen name. The brewery made a radical choice: to produce only junmai daiginjo, exclusively from Yamada Nishiki, Japan’s most renowned sake rice, polished until just 23% of the grain remains. This extreme polishing, combined with low-temperature fermentation, allows the delicate aromas produced by the yeasts - the hallmark of the ginjo style - to fully express themselves. For Dassai, the world of sake must evolve to survive: the brewery has thoroughly overhauled its methods, combining artisanal techniques, state-of-the-art equipment and pure water from Yamaguchi’s mountains to brew year-round, guided by a single criterion: quality over quantity. The result: pure, silky sakes that are fruity, balanced and remarkably refined, to be enjoyed on their own or with refined cuisine, which they complement without ever overpowering. Today, among Japan’s most influential breweries, Dassai has become a global benchmark for premium sake.
