A condiment with a fresh, umami taste. It is made by simmering Japanese rice miso, natural yuzu juice and fermented seasoning in a large pot, so that the mixture develops perfectly balanced aromas of sweetness and acidity. This condiment lends itself to a multitude of different uses: as a dip to sublimate seasonal vegetables, to accompany grilled fish, in yoghurt or even with fresh fruit.
