Fondée en 1830 dans la ville d'Imizu, dans la préfecture de Toyama, Kataokoya débuta son activité en produisant de la sauce soja, puis se diversifia en y incluant la production de miso. L'entreprise valorise les procédés de fabrication naturels et traditionnels. Elle utilise exclusivement des produits locaux, comme le riz et le soja provenant de la région de Toyama.
