A white Ginjo Etchu rice miso with a deep flavor and delicate texture. Etchu miso is a traditional variety of miso originating from the Etchu region, the former name of what is now Toyama Prefecture. Its production method involves adding kōji rice and salt to the soybeans immediately after they have been cooked, without draining them. Its slow fermentation, along with a higher ratio of salt and kōji rice than in classic miso, contributes to a rounded flavor and umami balanced by its salty notes. Its high ratio of kōji rice makes it an ideal choice for marinades, giving meats a tender and juicy texture. It is also perfect for broths, miso soups, and sauces.
