Ginjo Etchu white rice miso with a deep taste and delicate texture. Etchu miso is a traditional variety of miso from the Etchu region, the former name of today's Toyama prefecture. It is made by adding kōji rice and salt to the soybeans directly after cooking, without draining. Its slow fermentation, together with a higher ratio of salt and rice koji than conventional miso, give it a rounded, umami taste balanced by its salty notes. Its high ratio of rice kōji makes it an ideal choice for marinades, giving meats a tender, juicy texture. It's also perfect for broths, miso soups and sauces.
