A fresh, low-alcohol sake brewed high up in the town of Saku in the Asama mountain range in Nagano Prefecture, using mountain water and sake rice, including Chikuma Nishiki rice, also from Nagano Prefecture. The brewery, located at an altitude of 700 meters, experiences very cold winters where temperatures can reach -10°C, which allows the cooked rice to cool to the brewing temperature and naturally controls bacteria, resulting in slow fermentation. Its fresh taste makes it an ideal choice to accompany a wide variety of Japanese dishes, from beef tataki to simmered dishes such as nabe, as well as Western dishes such as risotto.
