This sake, aged at low temperature for almost a year, is smooth and round. It has fruity notes of pear and walnut, as well as mushroom aromas, typical of the Omachi rice variety used. It has a long, lingering finish.
Made with Omachi rice, an exceptional rice from Okayama prefecture, polished to 50%, this Junmai Daiginjo sake has been carefully crafted by the masters of the Bitchu brewery. The low-temperature aging process reveals all the characteristic richness and sweetness of this rice variety. It has won several awards, including a silver medal at the 2017 IWC, a gold medal at the 2019 and 2025 editions of the 2019 Kura Master competition and a silver medal at the 2020 National Sake Competition in the USA.

Shiragiku Shuzo is located in Takahashi-shi, in the Bitchu region, in the heart of Okayama Prefecture, surrounded by mountains and crossed by the Nariwa River. Founded over 100 years ago, it is distinguished by its ancestral know-how in sake production. The company uses high-quality local rice varieties, such as "Omachi" and "Yamada Nishiki", grown in the region. Its pure water, drawn from local springs, and mastery of "Bitchu Toji" production techniques guarantee products with a unique, refined taste.

Keep away from light and heat. After opening: Store in a cool place, tightly closed. Consume quickly.
