This sake, aged at low temperature for almost a year, is smooth and round. It presents fruity notes of pear and walnut, as well as mushroom aromas, typical of the Omachi rice variety used. It has a long, lingering finish. Made with Omachi rice, an exceptional rice from Okayama prefecture, polished to 50%, this Junmai Daiginjo sake has been carefully crafted by the masters of the Bitchu brewery. The low-temperature aging process reveals all the characteristic richness and sweetness of this rice variety. It has won several awards, including a silver medal at IWC 2017, a gold medal at Kura Master 2019 and a silver medal at the National Sake Competition in the USA in 2020.
