This sake, aged at low temperatures for nearly a year, is smooth and well-rounded. It features fruity notes of pear and walnut, as well as aromas of button mushrooms, characteristic of the Omachi rice variety used. Its taste is distinguished by a lovely long finish.
Made with Omachi rice, an exceptional rice from Okayama Prefecture polished to 50%, this Junmai Daiginjo sake was carefully crafted by the master brewers at the Bitchu brewery. The low-temperature aging process brings out all the richness and smoothness characteristic of this rice variety. It has won several awards, including a silver medal at the 2017 IWC, a gold medal at the 2019 and 2025 editions of the Kura Master competition, and a silver medal at the 2020 National Sake Competition in the United States.

Shiragiku Shuzo est située à Takahashi-shi, dans la région de Bitchu, au cœur de la préfecture d'Okayama, entourée de montagnes et traversée par la rivière Nariwa. Fondée il y a plus de 100 ans, elle se distingue par son savoir-faire ancestral dans la production de saké. L’entreprise utilise des variétés de riz locales de haute qualité, telles que l’"Omachi" et le "Yamada Nishiki", cultivées dans la région. Son eau pure, puisée dans les sources locales, et la maîtrise des techniques de fabrication des "Bitchu Toji" garantissent des produits au goût unique et raffiné.
