These Japanese noodles are made from 100% Japanese wheat flour and sunflower oil. They are handcrafted and contain only natural ingredients. The taste of the noodles is delicate and subtle, highlighting the natural flavor of the wheat. Established in Minami-Shimabara since 1985, Ōhira Seimen perpetuates the art of tenobe sōmen through a traditional 10-step method. Thanks to a dough prepared with selected flour, local salt, spring water and sunflower oil, its noodles are distinguished by their elasticity, finesse and authentic taste.
For 1 person: immerse 1 portion of sômen in 1L of boiling water. Cook for 1 to 2 minutes, stirring gently. Drain and rinse in cold water. Serve immediately.
Adjust the cooking time and firmness of the noodles to your taste.

These somen noodles are very good. They have a nice texture. I tried them by making the "akuma no somen" (devil's somen) recipe with a sauce made from mayonnaise and tsuyu, sprinkled with fried foods and spring onions, and an egg yolk. Excellent! I'll try a more minimalist recipe next time.
